Keto New York Cheesecake

Ingredients:

  • 24 oz. softened cream cheese
  • 1 cup ricotta cheese
  • 1/2 cup sour cream
  • 1 1/2 cup keto-friendly diet sweetener (I use 50/50 erythritol and Splenda)
  • 1/3 cup heavy whipping cream
  • 1 T vanilla
  • 1 T lemon juice
  • 2 eggs
  • 3 egg yolks
  • 1 cup walnuts, ground
  • 1 T erythritol
  • 1 T butter, melted

Instructions:

Preheat oven to 400 degrees. Spray a Springform pan with cooking spray. Pulse walnuts in food processor until they are finely chopped but not completely ground. Stir in erythritol and melted butter. Once combined, press into the bottom of the Springform pan. Fill a shallow pan, large enough to hold the Springform pan, with about 1 inch of water. Process ricotta in a food processor until smooth. Mix cream cheese, ricotta, sour cream and sweetener on low speed for 1 minute. In a separate bowl, whisk heavy cream, juice and yolks. Slowly pour egg mixture into the cheese mixture. Beat on medium speed just until blended. Pour into the pan and place in the heated water. Bake 14 minutes and then lower the temperature to 275 and bake for 1.5 hours or until the top is a very light brown and cheesecake is pulling away from the sides of the pan. Turn the oven off when finished and leave inside to cool for 3 hours. Remove and chill. Top with Torani syrup or chopped berries.

October Keto Krate Review

Since the the pandemic, I’ve avoided going out like the plague (Pun intended). Something about the threat of imminent death really puts a dampener on shopping trips and other excursions. Cue online shopping and subscription boxes. Now that I’ve gotten my vaccines, I feel a little better about venturing out, but still nothing beats getting your groceries in the comfort of your pajamas. During the first few months of isolation, I struggled to keep off the weight, but discovering KetoKrate has really helped me get back on track. Keto Krate is a monthly subscription box packed with keto snacks, mixes, shakes, and other goodies. I have been receiving a Krate for close to a year now, and I always find something I love in each Krate selection. Each Krate item is 5 net carbs or less per saving, gluten free, and malitol free, so I can rest assured none of my Krate goodies will knock me out of ketosis. The October Keto Krate didn’t disappoint.

IQ Bar: Wild Blueberry

IQ’s Wild Blueberry Bar was one of my favorite items from the Krate. The bar texture is soft, and lightly flecked with small seeds. It taste was authentic, and fresh. I was very pleased. Overall, the bar was somewhat reminiscent of the blueberry Fig Newtons I enjoyed in my childhood.

Quevos Egg WHite Chips: Rancheros

I really liked the Quevos Egg White Chips, but I think the texture is more similar to crackers. Oddly enough, they remind me a bit of Nabisco’s Chicken in a Bisket crackers. This snack was a definite win.

At this point in my keto journey, I am the connesurier of pork rinds. They are either a really good chip substitute, or really good dog treats. In this case, Pork King Good succeeded in creating a tasty carb-free snack. I love how fluffy and light these pork rinds were.

Better Than GOOD: Keto Protein Puffs (Baked Cheddar)

If you miss munching on Cheetos, you might want to try this keto alternative. These protein puffs have a delicious cheesy flavor, and a perfectly crunchy texture. The protein flavor is very mild.

Kitu Super Coffee: Maple Pumpkin

Kitu Super Coffees have an impressive 200 mg caffeine and some seriously modest macros. The nutritional value of the this drink is almost enough for me to forgive the flavor, but not quite. Honestly, there is just something a little off-putting about this brand of coffee. I was suspicious that stevia leaf was responsible for the grassy flavor, but the nutritional information only boasts of monk-fruit Being such a big pumpkin spice fan, I really wanted to like the Maple Pumpkin flavor, but it just wasn’t for me.

ChocZero: Dark Chocolate Peanut Butter Cups

I was tickled to see another ChocZero product in my box this month, as I always love their candies. My expectations were a bit high, but for the most part I was not disappointed. The dark chocolate was perfection, but the peanut butter filling was a bit of a let down to me. I was looking forward to a more traditional Reese’s-like taste and texture. Perhaps if I had anticipated a peanut butter flavored fat-bomb, I would have liked them better. All the same, while these didn’t hold a candle to one of my childhood favorites, these were not terrible in their own right.

Keto Farms: Cocoa Dusted Almonds

As far as keto snacks are concerned, sometimes less is more. I love the simplicity of the Keto Farms Candied Nuts, especially the Cocoa Dusted Almonds. These had just the right amount of chocolaty sweetness to appease my sweet-tooth! I had tried these almonds before and loved them, but this time the texture was a little less crunchy than I had expected; however, this might have been due to a packaging flaw.

Love Good Fats: Chewy-Nutty (Dark Chocolate Sea Salt & Almond)

The Love Good Fats Chewy-Nutty bar are one of the most wholesome tasting bars I have tried. They were just mildly sweet, and perfectly crunchy. I would definitely recommend these bars to any Kind bar fan gone keto!

Real Jerky: Original Beef Stick

I love that the RealJerky Original Beef Sticks are made with all natural Angus Beef. I’m not a huge fan of soft beef sticks preferring chewy beef jerky, but this was one of the better ones I have tried.

The Cookie Department: Champion Chip

I have nothing bad to say about The Cookie Department’s Champion Chip cookie. It was one of my favorite snack in this month’s Krate. Nothing beats a good soft-baked keto cookie, especially when its dotted with delicious chocolate chips.

I honestly had no idea almonds could taste like these. While I definitely could enjoy a handful or hearty almonds now and then, these almonds were of a much higher-caliber. These almonds were delicious, buttery, and smooth. Snacking on almonds is suddenly seems a little luxurious.

Mission Meats Beef Bar: Tasty Original

Sadly, the only thing I liked about this beef bar was the macros. The soft-texture mainly was very off-putting to me. But that might just be my personal preference. My 8 year old niece loved it, which is saying something for sure!

Strawberry No-Pretzel Salad

Ingredients:

Crust:

  • 2 cups walnuts
  • 1/4 cup melted butter
  • 5 TBSP erythritol
  • 1/2 tsp salt

Cheescake Layer:

  • 1 cup Swerve confectioners sweetener
  • 2 (8 oz) packages cream cheese
  • 1 1/2 cups heavy whipping cream

Strawberry Layer:

  • 1 package sugar-free strawberry flavored gelatin
  • 2 cups boiling water
  • 1 (16oz) package frozen strawberries

Instructions:

  • Toast walnuts in small frying pan with two tablespoons of butter. Once fragrant, transfer to food processor. Add sweetener, salt, and remaining melted butter, and pulse until walnut pieces are no larger then a pea. Press into the bottom of a 9×13 inch baking pan.
  • In a mixing bowl, beat softened cream cheese and sweetener until smooth. Set aside. Whip cream until stiff peaks form, fold into cream cheese mixture. Carefully spread over but crust, and chill for 30 mins.
  • Bring water to a boil, and mix in strawberry flavored gelatin. Add in frozen strawberries, and stir until the mixture has cooled to room temperature. Spoon strawberries onto cheesecake layer, then gently pour strawberry gelatin over the surface. Refrigerate 2-4 hours, or until set.

Blueberry Cheesecake FROYO Bars

Ingredients:

  • 1/4 cup Erythritol
  • 1 cup frozen blueberries
  • 1 tbsp lemon juice
  • 1/4 tsp xanthan gum
  • 8 oz cream cheese
  • 1 cup low carb greek yogurt
  • 1 tbsp vanilla
  • 1/2 cup Swerve powdered sweetener (or more to taste)
  • 1 cup Chocolate Granola

Instructions:

Heat blueberries, erythritol, and lemon juice in a saucepan, stirring often. Bring to simmer and add in xanthan gum a little bit at a time. Simmer until mixture thickens. Chill until cool. In a mixing bowl, beat softened cream cheese until smooth. Slowly add yogurt and vanilla extract. Still mixing, mix in Swerve. Scoop into 3 oz. plastic cups or ice cream molds. Insert a popsicle sticks into the center of each, and top with keto Chocolate Granola. Freeze until set, at least 5 hours. Before serving, it’s sometimes helpful to let the bars thaw slightly.

No-Churn Cookies and Coconut Cream

Ingredients:

Instructions:

Whip heavy whipping cream, Logica, and vanilla until stiff peaks form. Slowly add coconut milk, whipping on high speed. Pour mixture in airtight container and put in freezer. Prepare Fudge Brownies according to package instructions, break in small pieces, and store in refrigerator. Stir ice cream every hour, adding brownie pieces and a drizzle of chocolate syrup once ice cream has reached the consistency of soft-serve ice cream (about 6 hours).
